Crude Papain also known as Papaya Proteinase I, is a cysteine protease enzyme present in papaya (Carica papaya). It is extracted from the latex of the papaya fruit. It is extracted in crude form and can be further purified to a refined powder. Papain breaks down tough meat fibers, and has been used for thousands of years to tenderise meat. It is also used in Ointments to remove dead tissue of acute or chronic wounds.
